Ghee is clarified butter. Although it is prepared completely from butter, its properties, according to Ayurveda, are very different from butter itself. Once of the most obvious differences is that all of the milk protein has been removed. Ghee is pure fat with none of the impurities that may be found in butter. Unlike butter, ghee contains no bacteria and it is not prone to turning rancid, even after storing it for several months outside the refrigerator.

The Kulcha is a variety of baked flat bread that is made using refined flour. It is leavened with baking powder and active, whole milk yoghurt. It can be eaten as is or lightly toasted in a pan or toaster. It tastes slightly sour and is sometimes garnished with chopped coriander leaves on top. Kulchas are usually eaten with a chickpea curry and are also good with Indian pickles for breakfast.



If a recipe demands butter, it should be clarified. This is a simple and worthwhile chore but clarified butter is widely available in Indian and Middle Eastern food shops, where its called Desi Ghee.

Its the same age old story of the good guy vs the bad guy. Incidentally both of them are white. If you are on a diet I'm sure you avoid carbs like plague but do you know that indirectly this is helping your skin? Food rich in carbs like White Bread, Sugar, Potatoes cause insulin levels in our body to rise which researchers say cause reactions in our body resulting in breakouts. Instead opt for moderate amounts of complex carbs like whole grain breads and biscuits(currently I swear by Britannia Nutri Choice 5 Grain Biscuits). These are digested slowly which does not result in an insulin spike causing skin inflammation.

You can buy a jar of ghee in Indian grocery stores, in some health food stores, and online, but I usually make my own. Another benefit is that, because the milk and other solids are cooked out of it, ghee has a longer shelf life than regular butter.



If you want to make it a lavish spread, then it has four accompaniments viz. dahi (yogurt), ghee (clarified butter), radish, and mango pickle. You should not have an inferiority complex while serving it to a visiting guest. A chutney of grated radish and roasted, ground sesame seeds and lime juice can do wonders to the whole spread (may we call it that!). Alternatively, you can make a simple ghee best company in india chutney of coriander leaves, mint leaves, onion and lime juice.

Take a sharp knife and cut a slit from the centre of the circle out to the edge. Put the knife down and take hold of one of the new edges and fold it back about two inches. Continue folding the same piece again and again until you end up with a flat but layered triangle.

Tibetan people seldom eat fish due to their religion and custom. Restaurants in Tibet at present serve Tibetan, Chinese, and even Western food. The choice for vegetables will be limited due to the short agricultural season.
